Next week, beginning May 17 and ending on the morning of May 23, I am doing a vegan week. If you don’t know what a vegan is, here’s a summation. Vegans don’t consume any kind of animal by-product at all. Animal by-products are eggs, milk, honey, leather, etc. Vegans do not eat anything that has any kind of animal by-product in it, so I’ll be temporarily nixing cheese and eggs, as well as anything else that does not qualify as vegan.
I am doing this for several reasons, the largest of which is that I just really like doing personal challenges like this. I also think it will help me be more aware of the things in my diet. I will encourage me to find new, healthy and creative ways to eat veggies (as in, not covered in cheese).
I am going to stick with it definitely for the days listed above. If by the end of that time, I don’t feel like I’ve gotten what I want out of the challenge, I will either choose to extend it for some other period of time, or I will choose to restart the challenge a little later and set the time period for much longer.
